Protein Waffles

It’s not your cheat day, however you need to feel like it is. These protein waffles are just the trick.

For one serving, (double for two people):

  • 1/2 banana
  • 1/2 cup oatmeal
  • 1/2 cup egg whites
  • 1/4 cup Greek yogurt or cottage cheese (if you don’t have either it works without it)
  • 1 tbs coconut oil
  • Cinnamon
  • Pinch of salt
  • 1-2 tbs honey or agave or trivia
  • 2 tsp baking powder

Blend until it becomes a smooth batter.  Can be made into pancakes or waffles.  If making pancakes,  make 3″ diameter.   Larger pancakes will not cook well as this is a gluten-free batter.
