It’s not your cheat day, however you need to feel like it is. These protein waffles are just the trick.
For one serving, (double for two people):
- 1/2 banana
- 1/2 cup oatmeal
- 1/2 cup egg whites
- 1/4 cup Greek yogurt or cottage cheese (if you don’t have either it works without it)
- 1 tbs coconut oil
- Pinch of salt
- 1-2 tbs honey or agave or trivia
- 2 tsp baking powder
Blend until it becomes a smooth batter. Can be made into pancakes or waffles. If making pancakes, make 3″ diameter. Larger pancakes will not cook well as this is a gluten-free batter.
